GUERIN’S CHAMPIONSHIP CHILI
Ingredients:
1 lb. chili ground beef
1 lb. 3/8-inch cubed pork
1 lb. 3/8-inch cubed beef
2 medium onions, diced
3 tbsp. chopped garlic
6 tbsp. masa flour
6 tbsp. chili powder
3 tbsp. cumin
1 tbsp. oregano
3 tbsp. black pepper
3 tbsp. brown sugar
1 tsp. MSG
3 tbsp. soy sauce
1 tbsp. liquid smoke
1 tbsp. chipolte paste
2 cans of diced tomatoes
2 cans of green chile peppers
2 cans kidney beans
1 bottle of ketchup
1 cup beef stock
2 bottles of beer
Cooking instructions:
On a baking sheet, pan brown cubed meat in a 400-degree oven.
Brown ground beef in a large pot or dutch oven, adding onions and garlic.
In a bowl, pour two bottles of beer and add all spices; let stand for
30 minutes.
Add the cubed meat to the pot, mix in flour, beer mixture, ketchup, diced
tomatoes, beef stock, green chiles and beans.
Let simmer for 1 hour, stirring frequently.
For a spicier taste, add your favorite hot peppers.
